Coffee cream variegated with pistachios

To prepare the pistachio cream, you will need:

80 gr natural pistachio
500 ml milk
3 egg yolks
75 gr flour
1 small bag of vanillin
100 gr sugar.

Place pistachios in the grinder and mince them finely.
In a saucepan, mix the milk, flour, sugar, yolks and vanillin.
Transfer to the fire and let it thicken stirring constantly.  When the cream is ready, add the pistachios, cover with plastic wrap and let it cool. If you do not want to prepare it every time, you can preserve it.
Place in the cold glass the coffee cream and cover it with the pistachio cream.  Garnish with bittersweet chocolate flakes and, optionally, with candied oranges.
